Healthy Banana Oatmeal Raisin Cookies
Yields: 15 biscuits
These oatmeal biscuits are tender, chewy, and full of banana flavor! The familiar cozy spices and plump blueberries make these much more irresistible. They'll keep for at least one week if kept in an airtight container in the fridge --if they last long!
1 cup (100g) instant oats (fermented if needed and measured like this)
3/4 cup (90g) whole wheat or fermented * flour (quantified like this)
1 1/2 tsp baking powder
1 1/2 tsp ground cinnamon
1/4 teaspoon salt
2 tbsp (28g) unsalted butter or coconut oil, melted and cooled slightly
1/4 cup (63g) mashed banana
1 teaspoon vanilla extract
In a medium bowlwhisk together the yogurt, milk, baking powder, cinnamon, and salt. Add the flour mixture, stirring only until incorporated. Allow the cookie dough rest for 10 minutes.
Using a spoon and spatula, dip the cookie dough to 15 curved scoops onto the prepared sheet, and flatten to the desired thickness and width by means Healthy Cookie Dough (Edible, Paleo, Vegan, Gluten Free) - 40 Aprons of a spatula. Bake in 325°F for 10-12 minutes.

For the fermented flour, I recommend the following blend: 1/2 cup (60g) millet flour, 2 tablespoons (15g) tapioca flour, two tbsp (15g) brown rice flour, as well as 1/2 tsp xanthan gum. Most store-bought gluten-free flour blends (like this one!) Will also do the job, if measured like this.
